Glazed Salmon

Description
Heat a medium nonstick skillet over medium-high heat and spray with vegetable cooking spray.
Brown salmon for 3 minutes, turn, and brown for another 3 minutes. Transfer salmon to a plate.
Add vinegar to the skillet and cook over high heat until about half remains, about 3 minutes.
Lower heat. Add mustard and mix well to make a smooth glaze.
Sprinkle salmon with salt and pepper to taste and return it to the skillet. Cook 1 minute.
Turn to coat both sides with the glaze and cook another minute or two, until cooked through.
Divide salmon into two portions and place on individual plates. Spoon any remaining glaze on top.
